Hey lovelies, I cannot describe to you how weird it is that I am typing up a post in the WordPress Editor rather than the Blogger Editor, it’s wild. Since isolation started I’ve been looking for more vegan recipes to try. I’m a big fan of eating a plant based diet where possible, so here are ten vegan recipes I’ve tried and loved.
Red Bean Quesadillas with Avo-Corn Salsa
Quesadillas have always been a meal that I loved, so when I found a vegan recipe for them I had to give it a try. I’m not going to lie I did add an incredible amount of vegan cheese to this recipe. All I can say is that it only added to the deliciousness. This only takes around 20 minutes to make as well so win-win.
Easy Fajitas
When I saw this online I was absolutely desperate to make it, I’ve always been such a big fan of mushroom, avocado and mixed vegetables. I love that with this recipe not only is it easy to make but you have the option to add in any vegan alternatives if you wanted to. Next time I make this I’d love to add some Quorn Chicken Bits.
Best Vegan Pizza
When I was looking for vegan recipes, I knew that I wanted to find one that was for homemade pizza. We all love pizza. Except I am not a fan of vegan cheese melted on pizza. This recipe stood out to me because it had cashew cream. Mine didn’t look anywhere near as good as this one, but it was delicious.
Cauliflower Tacos with Yum Yum Sauce
Mexican food is one of my favourite things to eat, so when I saw this I had to give it a go. I was super hesitant to have cauliflower as the taco filling because it really isn’t one of those food group that I love. It was far better than I expected. I love that you can add vegan meat alternatives into this recipes as well if you fancied it.
Easy Chickpea Salad Sandwich
Sandwiches have always been such a large part of diet because of my job. Looking for vegan sandwich recipes can be super boring. There aren’t many out there I’ve found that are quick to make, easy and actually end up tasting really good. I actually really love chickpeas so this was a winner for me.
Best Vegan Lasagna
I’ve always been the biggest fan of lasagne so I knew I had to include at-least one vegan lasagne recipe. I believe lasagne is one of those meals you need to have at-least once a week, it is just so delicious. This recipe doesn’t disappoint, you can also alter it to fit you dietary requirements.
Vegan Oatmeal Pancakes
I’ve said this a-lot on my twitter account but I love pancakes. So vegan pancakes are something I need in my life, I previously wrote a post about Pancake Recipes To Try because that is how much I love them. The oatmeal aspect makes them super easy to make and you can really add any topping that you would like with them!
Vegan Banana Cream Pie Parfaits
Anything that includes whipped cream in it is a winner for me, I’m such a big fan of parfait. I love that there are vegan options for it out there, the banana is a really nice touch in this if you ask me, and you could really swap it out for other fruits if you don’t like it. When I made mine I added a small amount of peanut butter into it and I loved it.
