A delicious hearty homestyle vegetable beef soup! I absolutely love this recipe in the Winter months. Not only to fill my family and I up, but to make us feel cozy. This hearty homestyle vegetable beef soup is the perfect warm comfort food! Let us get started, shall we?
Gather the Veggies
The first thing to do when preparing this wonderful dish is to gather the freshest ingredients possible. It can be hard to locate certain veggies at different times of the year, but these veggies are generally available year-round in most produce sections.
Here are the veggies you will need:
- Green onion
- Celery
- Carrots
- Potatoes
- Corn
- Green Beans
- Corn
Typically, these all can be found fresh and even pre-packaged.
I try to avoid frozen preserved or canned veggies for the freshest taste.
Dice Up the Veggies & Snap the Green Beans
I know it sounds like a lot of work, but this delicious hearty homestyle vegetable beef soup is well worth it in the end result.
First, begin by snapping your fresh whole green beans, be sure to snap off the ends and break them in half. Sometimes for longer beans you can snap them three times. I like to use about 2 cups worth.
Next, dice up about 1 cup of green onion, 1 cup of celery, and 1 cup of carrots.
Then, peel and chop up about 2 potatoes. I like russet potatoes the best.
For the corn it may be easier to purchase it bagged or you can shuck it fresh from the cob. About 1 cup will do.
Finally, throw all your veggies into a colander and rinse them very well.
Put the Veggies into A Crockpot
Simply pour your wonderful mixture of veggies into a crock pot. Then take 1 quart of vegetable juice and pour it over the vegetables.
While the veggies are soaking in the juice you can prepare your meat.
For this delicious hearty homestyle vegetable beef soup I like to use about 1 pound of premium stew meat.
Season the Meat
This step is so much simpler than the veggies. All I like to do is sprinkle about a teaspoon of salt and black pepper on each side of the beef.
Put the beef into the crockpot with the veggies and give it a nice stir.
Make sure that your veggies and beef are well combined so that the flavour can disperse much better.
For an even heartier soup you can add 1 stick of salted butter.
Cook Low and Slow
For the best results and taste for this recipe you really must cook it low and slow. Flip your crockpot onto the lowest setting and let it cook for 6 hours.
Cooked at this low setting the flavours will marry perfectly and you will get a much more rich and flavourful soup.
If you are in a hurry you can alternatively roast the veggies on a well-oiled baking sheet on 425 degrees Fahrenheit or 218 Celsius for 7 minutes.
Then cook everything together on high for 3 hours.
Serve Hot and Enjoy
Once this magical concoction has finished cooking it will be ready to serve! This amount of soup can easily serve 6 adults.
I like to serve it with regular saltines or a crusted soup bread. For a lovely touch you can add a parsley leaf to the top as garnish.
This recipe is so filling and the most delicious hearty homestyle vegetable beef soups I have ever had. It never goes to waste at my house and I am sure you will love it too!

Soup is one of my favourite meals to cook – it’s so easy to make but tastes to good! I love that this recipe includes celery since I hate it raw but it’s so good in soup.
