Strawberries are an amazingly versatile fruit that is included in a long range of recipes from sweet to savoury, breakfast to dinner and hot to cold drinks!
Strawberries are best in season during summer and there are lots of places where you can pick your own strawberries or purchase them locally at nearby farms!
Some of my favourite ways to use strawberries are in milkshakes, ice cream, cheesecake, muffins, cakes and salads!

Where can I find these ingredients?
Everything needed to make these strawberry crumble oat bars can be found in your local grocery stores. If you’re making these while strawberries are in season, I suggest you pick up fresh and local strawberries! I swear by this but purchasing local tastes better! If you bake on a regular basis and love making oatmeal then, you probably already have most of these ingredients in your home.
What is in this recipe?
You’ll news the following ingredients to make these super strawberry crumble oat bars:
Oat Bar Base:
- Quick Oats
- Light Corn Syrup
- Brown Sugar
- Unsalted Butter
- Oat Milk
- Vanilla Extract
Strawberry Jam:
- Strawberries
- White Sugar
- Lemon
Crumble Topping:
- Unsalted Butter
- Flour
- White Sugar
- Brown Sugar
What equipment do I need?
These strawberry crumble oat bars recipe needs to be baked so you’ll need to use an oven as well as have a greased baking dish or be lined with parchment paper. You’ll need to put the corn syrup and butter for the oat bar base on the stove, so a small non-stick saucepan is needed. Aside from that, you’ll need a few mixing bowls and spatulas and a fork to mash the strawberries to a bit of a puree. You can buy oat flour if you don’t want to grind some oats or use a food processor as I do!
What are the steps to prepare?
Since this strawberry crumble oat bar recipe is divided into 3 steps, you’ll need to:
- Mix
- Mash
- Pour
- Crumble
- Bake
Can I sub anything out?
As this is a fairly easy strawberry crumble oat bars recipe, there isn’t much to substitute out. You can opt-out of the crumble topping if you’re looking to save a bit of calories! This recipe really isn’t that sweet in my opinion which is nice so if you need to add a little more sugar, I recommend adding it to the strawberry jam mixture instead of the oat bar base!
You can, of course, use other fruit that you have. Blueberries, raspberries or blackberries would make great substitutions for strawberries. If you’re looking to escape the berry family altogether, you can do peaches or mangos!
What does it taste like?
Oat Bars taste like you’re having a soft breakfast bar! If you’ve ever had Starbucks Oat Bars, they are similar to that. The strawberries are the perfect fruit to complement this bar and the crumble makes the best yummy topping! These bars are soft and crumbly so I suggest eating this over a plate!
How long does it keep for?
I’m going to be the first to admit that I’ve left this on the counter for a week and they’ve gone bad so as soon as you can, once they’ve cooled, store them in an airtight container in the fridge for up to 5 days. Perfect for breakfast Monday-Friday if you’re meal prepping. Alternatively, you can store them in the freezer and let them thaw out before eating! Store them in the freezer for up to 2 ½ weeks for best quality!

These oat bars are a great quick breakfast on the go or mid-day snack. You can have these strawberry oat bars with:
- Coffee
- Tea
- Smoothies
- A Glass of Cold Water
- By Itself

You can swap out the strawberry and make:

Any other notes?
Just a few things to note for this strawberry crumble oat bars recipe:
- Super important to store them properly so they don’t go bad
- The riper the strawberries the sweeter so you can alter the amount of sugar you add to the strawberry jam mixture
Ingredients
Oat Bar Base
- 3 ½ Cups Oat Flour (Blend Regular Oats)
- ⅓ Cup Light Corn Syrup
- ½ Cup Dark Brown Sugar
- 1 Tsp Vanilla Extract
- ½ Cup Unsalted Butter
- ¼ Cup Oat Milk
Strawberry Jam
- 10-12 Strawberries
- ½ Tbsp White Sugar
- ½ Tsp Lemon Juice
Crumble Topping
- 2 Cups of All-Purpose Flour
- ½ White Sugar
- ½ Brown Sugar
- ½ Cup Unsalted Butter (melted)
Directions
- Preheat your oven to 350˚F and prepare a greased baking dish with butter or line it with parchment paper.
- In a medium-sized mixing bowl, thoroughly wash your strawberries and slice them into halves. Add in your sugar and lemon juice and mash with a fork until it is a jam or puree consistency then set aside.
- In a small saucepan, heat the butter, sugar and syrup until sugar is dissolved and melted. Remove from heat and whisk in the oat milk and vanilla extract.
- In a separate mixing bowl, add in your ground oat flour and the butter/syrup mixture. Stir together until well combined.
- Pour the oat bar mixture into your prepared baking dish and pour the strawberry puree on top. Try not to mix and spread lightly to cover the whole surface area.
- To make the crumble topping, in a separate (and last) mixing bowl, add in your flour, sugars, and melted butter. Use your hands to create little lumps of crumble.
- Spread crumble evenly on top.
- Bake in the oven for 45-55 minutes or until the top has browned and the bars are fully cooked. Remove from oven and let cool for about 15 minutes.
- Serve and enjoy!
Meal prepping is so important for me to have a less stressful week! These strawberry crumble oat bars make it super easy to have a yummy breakfast with little effort for a whole work week!
